Tortillas

 

4 cups unbleached all purpose flour

1 teaspoon salt

2 teaspoons baking powder

1 Tablespoon shortening (I use Earth Balance brand)

1 1/2 cups water

 

Combine dry ingredients in a medium sized bowl. Add shortening in small chunks. Using pastry cutter, cut shortening into dry ingredients until crumbly. Add water and mix until dough in well combined - it may be a little sticky. Knead for a couple of minutes, adding a little flour as needed. Pull off small chucks of dough - plum sized works well - and roll out on floured surface. Place in preheated cast iron skillet - flip after dough bubbles slightly and takes on golden color. Keep warm in a tortilla warmer or wrapped in foil until ready to serve. Wrap in foil and put in ziplock bag before freezing.
