Sweet Potato Gnocchi
2 large sweet potatoes
2 Tbsp margarine (I use Earth Balance)
2 cups (approx.) all purpose flour
Cook sweet potatoes – approximately 6 minutes on high in microwave. Mash the potatoes in a large bowl. Mix/mash with the Earth Balance and then add flour into potato mixture ½ cup at a time until dough is not sticky (you will need to work the dough with hands). Roll out a handful of dough at a time into ~ ½ inch snakes. Using knife, cut rope into ¼ inch nuggets (mine are usually closer to ½ inch, no need to be super precise). Roll nuggets against fork tines to form grooves. Set gnocchi on waxed paper in single layer. Refrigerate until ready to cook.
To cook: Add to salted boiling water. Cook for ~3 minutes. Drain and serve with sauce.
