Sweet Potato Gnocchi

 

2 large sweet potatoes

2 Tbsp margarine (I use Earth Balance)

2 cups (approx.) all purpose flour

 

 

Cook sweet potatoes approximately 6 minutes on high in microwave. Mash the potatoes in a large bowl. Mix/mash with the Earth Balance and then add flour into potato mixture cup at a time until dough is not sticky (you will need to work the dough with hands). Roll out a handful of dough at a time into ~ inch snakes. Using knife, cut rope into inch nuggets (mine are usually closer to inch, no need to be super precise). Roll nuggets against fork tines to form grooves. Set gnocchi on waxed paper in single layer. Refrigerate until ready to cook.

 

To cook: Add to salted boiling water. Cook for ~3 minutes. Drain and serve with sauce.
