Sausage and White Bean Casserole

 

1 Tbsp plus 1 tsp olive oil

1 lb sausage links (I prefer Grain Co. Apple Sage Sausage)

2 large carrots, peeled and chopped into inch pieces

2 cloves garlic, chopped

2 bunches dark leafy greens (chard, kale, collards all work well here) cut into 2-inch strips (~12 cups)

2 cans (15 oz each) white beans (navy, great northern, cannelini beans work well)

2 Tbsp bread crumbs (or crushed crackers)

salt and pepper to taste

rubbed sage

 

Heat oven to 400 degrees F. Heat 1 Tbsp oil in large oven-proof skillet over medium heat.

Add sausage to pan and cook completely. Transfer to plate.

Add carrots and garlic to skillet and cook for 1 minute. Add greens and cook until wilted (~ 2 minutes). Add beans and cup water to pan. Season with salt, pepper and rubbed sage. Nestle the sausage into the beans. Sprinkle breadcrumbs over top. Transfer skillet to oven and bake 25 minutes.
