Sausage and White Bean Casserole
1 Tbsp plus 1 tsp olive oil
1 lb sausage links (I prefer Grain Co. Apple Sage Sausage)
2 large carrots, peeled and chopped into ½ inch pieces
2 cloves garlic, chopped
2 bunches dark leafy greens (chard, kale, collards all work well here) cut into 2-inch strips (~12 cups)
2 cans (15 oz each) white beans (navy, great northern, cannelini beans work well)
2 Tbsp bread crumbs (or crushed crackers)
salt and pepper to taste
Heat oven to 400 degrees F. Heat 1 Tbsp oil in large oven-proof skillet over medium heat.
Add sausage to pan and cook completely. Transfer to plate.
Add carrots and garlic to skillet and cook for 1 minute. Add greens and cook until wilted (~ 2 minutes). Add beans and ½ cup water to pan. Season with salt, pepper and rubbed sage. Nestle the sausage into the beans. Sprinkle breadcrumbs over top. Transfer skillet to oven and bake 25 minutes.
