Black Bean and Quinoa Burger
1 1/2 cups cooked quinoa, divided (1/2 cup quinoa cooked in 1 cup Better Than Bouillon Vegetable Stock)
1 small onion, chopped
oil for frying
1 1/2 cups black beans, cooked and divided
2 cloves garlic, minced
Cook onions in skillet with a touch of olive oil until soft, ~5 minutes
Stir in ¾ cup of black beans, garlic and ¾ cup water. Stir occasionally. Cook until most water evaporated.
Transfer to food processor along with ¾ cup cooked quinoa. After chopping, transfer to bowl and mix in remaining beans and quinoa.
Scoop out and cook on heated and oiled cast iron skillet or griddle. Flip when browned and let other side cook thoroughly.
