Taco Night

On a boring night, tacos might consist of black beans lightly seasoned, and simple toppings like salsa, lettuce and tomato. This week, I was feeling a little more adventurous. This concoction was so flavorful we ended up skipping any toppings or salsa. This is perfect served in homemade tortillas or taco shells.

  1. 1 can pinto beans, rinsed and drained
  2. 1 can black beans, rinsed and drained
  3. 1 small onion, chopped
  4. 1 bell pepper, cored and chopped
  5. 4 medium tomatoes, chopped
  6. 1 1/2 cups frozen corn kernel
  7. 4 small or 1 large sweet potato, peeled and chopped in 1/2 inch pieces
  8. olive oil for cooking
  9. 1/2 tsp ground chili pepper
  10. 1/2 tsp ground cayenne pepper
  11. 1 tsp ground cumin
  12. 1/8 tsp ground coriander
  13. 1 Tbsp nutritional yeast
  14. salt and pepper to taste
  1. Saute sweet potato olive oil until starting to soften
  2. Add onion and bell pepper to skillet and continue to cook on medium heat until onions are translucent
  3. Add spices and nutritional yeast to mixture
  4. Add beans, tomatoes and corn to skillet and cook for an additional 5 -10 minutes, until tomatoes softened.
  5. Add salt and pepper to taste.
