I didn’t spend a whole lot of time in the kitchen today, with my husband being home for the Labor Day holiday. But I did put together one of our favorite foods, perfect for the grill. This is one of those dishes you can really dress up as little or as much as you want.
I used ~3 pounds (8-10 medium) organic red potatoes, peeled and diced. I kept it simple with a few carrots and a bunch of green onions. I drizzled in some olive oil, tossed with coarse salt and fresh ground pepper, and then transferred to foil pouches. These cooked on the grill for 30 minutes, turning occasionally. Here is the final product – soft, seasoned veggies.
