I made it through the worst of the first trimester nausea to actually have an appetite for the Christmas holiday dinner. While most of the meal was standard fare for our household – tofurky, mashed potatoes, gravy, cornbread, vegetables, I decided to try something new for dessert. I had been wanting to try a vegan banana pudding for quite a while. I grew up with my mother making her banana pudding (yes the kind with nilla wafers) every year, and have been wanting to make a vegan version for a few years now. Susan at Fat Free Vegan Kitchen has an awesome southern style banana pudding that was just what I was looking for. I used the Earth’s Best Alphabet cookies as suggested in her recipe, and modified it to be the full-sugar version, rather than using stevia sweetener. I recently came across Back to Nature’s Vanilla Wafers that I might try for the next time. The family really enjoyed this dish, and it was nice to have an old family dessert made new for our vegan household.
