Saturday morning breakfast

I love a nice hot breakfast on the weekends. Most mornings during the week are too hectic, and PBJ on toast is our standard fare, so its nice when the weekend rolls around and I can put a little more effort into a hot meal. Usually I’ll prep a double batch of Cinnamon Oatmeal pancakes, with some Gimme Lean sausage. The pancakes are my daughter’s favorite, and serve as breakfast and snacks for the better part of the week. This morning, my southern roots were shining through (they don’t usually but every once in a while, they come out) and I was really wanting some grits. Truth be told, I grew up eating grits in New Jersey as a young child, but they are often associated with southern food, and my born and bred New Yorker husband refuses to eat them. I have always wondered about how some people eat their grits. I’ve heard of people putting sugar in their grits, which to me is just weird. I typically like butter (Earth Balance) and salt and pepper. Its once of the few foods I like with salt. But grits with Gimme Lean sausage is an awesome breakfast!

Cinnamon Oatmeal Pancakes

1 1/3 cups all purpose flour
2/3 cup oats
2 Tbsp sugar
2 1/2 tsp baking powder
1/2 tsp salt
1 egg equivalent (I use EnerG 1 1/2 tsp + 2 Tbsp water)
1 1/3 cup milk (usually soy or almond)
3 Tbsp margarine (Earth Balance)
1 tsp cinnamon

In a large bowl, stir together flour, oats, sugar, baking powder, salt and cinnamon.

In a smaller bowl, combine and beat together eqq replacer, milk and melted margarine. Add wet ingredients to dry ingredients. Stir until just combined. Let stand for 5 minutes. Cook on heated oil skillet. I prefer my cast iron skillet for this. This recipe is adapted from 1000 Vegetarian Recipes.

Sausage and grits=awesome.
